Biscay offers some of the most traditional dishes in the Basque Country. The local cuisine is similar to the rest of the region's. The pleasure alone of tasting its ancestral recipes is reason enough to visit this province.
Biscayan cuisine stands out for its simplicity and its variety. Fish is the star of Basque cuisine in general and of Biscayan cuisine in particular. Try the excellent Biscayan-style eel, red bream a la espalda (lightly fried, then baked), baked sardines, Basque-style hake from Bermeo, anchovy casserole and bonito from the North. In addition, Biscay is the best place in Spain for cod, with a myriad of different recipes to prepare it, such as Biscayan-style cod, al pil-pil, baked, fried, peasant-style, ajoarriero (with oil, garlic and peppers) and in a kind of soup called zurrukutuna, which is baked after it is done to concentrate the flavour of the cod.
