Biscayan cuisine stands out for its simplicity and its variety. Fish is the star of Basque cuisine in general and of Biscayan cuisine in particular. Try the excellent Biscayan-style eel, red bream <i>a la espalda</i> (lightly fried, then baked), baked sardines, Basque-style hake from Bermeo, anchovy casserole and bonito from the North. In addition, Biscay is the best place in Spain for cod, with a myriad of different recipes to prepare it, such as Biscayan-style cod, <i>al pil-pil</i>, baked, fried, peasant-style, <i>ajoarriero</i> (with oil, garlic and peppers) and in a kind of soup called <i>zurrukutuna</i>, which is baked after it is done to concentrate the flavour of the cod.
