Parador de Siguenza - Installed in an Arabic citadel, which was constructed on a Roman settlement, construction on this imposing castle began in 1123, and was the residence of bishops, cardinals and kings. It is a suitable location to enjoy this historical town, close to very beautiful natural spaces. The traditional Castilian furniture is displayed with taste in the spacious, friendly bedrooms, some with four poster beds and terrace, genuine royal chambers in a palace which conserves stately living rooms, ideal for meetings and celebrations, and a 13th c. Romanesque chapel. In addition to a stone courtyard and a modern gym, the Parador¿s thick stone walls enclose a stately dining room, where one can sample exquisite dishes such as fried bread crumbs with bacon and fried eggs, roast suckling kid, cod prepared with manchego cheese, and for dessert, the famous borrachitos seguntinos or flores de Cabanillas all prepared with the very best regional and seasonal products.
